    La Malvasia di Schierano e il Metodo Martinotti: un'accoppiata vincente

    Since 1700, Cascina Gilli has been an opportunity to meet and propel the culture of a magical place, the lower Monferrato. An area of overwhelming beauty where harmony reigns with the landscape and an up and down of roads that silently cut through the rurality of the terroir. Here 11 hectares of vineyards are cultivated with Freisa, Bonarda, Barbera, Nebbiolo and Malvasia di Schierano.

    Malvasia di Schierano, also known as "short bunch" Malvasia, gives rise to the Doc Malvasia di Castelnuovo Don Bosco. This Malvasia represents a true oenological pride of the Monferrato terroir. In fact, it represents the jewel in the crown of the area known as Terre dei Santi, and its particularity lies in the aromatic character of the grapes associated with the colouring of the berry, an all-Piedmontese peculiarity.

    Cascina Gilli has promoted the revival of this rare and ancient grape variety. Cascina Gilli's key role lies in having been able to preserve and hand down its territory and traditions. In fact, it has made itself available for experimentation to enhance and test new ways for Malvasia di Schierano. The starting idea was to produce an extra dry rosé Martinotti method sparkling wine.

    The opportunity to assess the suitability for sparkling wine making using the Martinotti method was taken in the 2019 harvest. The qualitative success of a Martinotti sparkling wine produced with this variety stabilises the product on an aromatic level that is better preserved over time. The aromatic profile of this sparkling wine is very expressive, with a perfect balance between fruity and floral sensations. This characteristic, combined with a much lower residual sugar than the classic sweet sparkling wine version, makes it particularly suitable for consumption as an aperitif.
